Title: TOMATO SALAD WITH CREAMY BACON DRESSING

We called this salad a BLT in a bowl. It is not heartsmart but it sure is tasty.

Ingredients:
6 lb. bacon, diced and cooked slowly until crisp

3 c. of the bacon fat, warm

12 eggs at room temp.

6 oz. dijon mustard

1 Tb. salt

1 tb. white pepper

3 c. corn oil

1 lb. grated cheddar

Instructions for preparation:
Put the eggs, lemon juice, mustard, and salt in a blender and begin blending at medium speed. Slowly pour in the bacon fat and corn oil, and then add the bacon and blend 5 seconds longer.
Place several slices of tomato on a bed of Boston lettuce and sprinkle with grated cheddar. Top with dressing.
